Italian Cauliflower Rice Salad

Ingredients:

  • 2½ cup rice cauliflower
  • (Easy to make by processing a head of cauliflower in a food processor.)
  • ¼ cup Nature's Eats Sun Dried Tomatoes
  • ¼ cup Nature’s Eats Pine Nuts
  • ½ bunch or 1 cups of fresh chopped basil or 3 tablespoons dried basil
  • 1½ teaspoon salt
  • 1 teaspoon Italian seasoning
  • 2 tablespoons Balsamic Vinegar
  • 1 tablespoon lemon juice
  • ½ cup sliced cherry tomatoes
  • Optional: ¼ cup Burrata cheese

Directions

  1. In a large bowl toss together all of the above ingredients.

  2. Chill and serve.

  • Although this recipe uses cauliflower rice as a base you do not really taste the cauliflower, but mostly the Italian dressing from the spices, sun dried tomatoes, and basil. An occasional crunch from the pine nuts adds a nice texture and the dressing ties the ingredients together perfectly.
